Roberto Figueroa started in agriculture as a vegetable farmer. With the support of his older brothers, Roberto purchased 3.5 hectares of land that comprise his farm, El Plan, and began growing regional staple crops, like corn, beans and potatoes. However, when it became evident that these crops would be difficult to cultivate and ultimately unsustainable, Roberto began looking for an alternative crop that would prove to be more dependable.

Inspired by neighboring coffee farmer Miguel Moreno, Roberto shifted his attention and resources toward coffee cultivation. The transition marked an important shift for Roberto and his family; he now oversees nearly 2.5 hectares of producing coffee trees (around 9,500 trees) all of the Pacas variety, producing around 4400 kg of coffee annually. Once picked, the coffee cherries are dry fermented for 19 hours, washed 5 times, and dried for five hours on raised beds. The coffee is then hand-sorted for defects and moved to a solar dryer for 15 days. The meticulous care and attentiveness put into growing and processing coffee at El Plan results in a bright, sweet cup, bringing notes of persimmon, hibiscus right to the front.
