Working with a small network of boutique importers and several producer-relationships we’ve developed over the years, we source coffees that are sweet, clean and in possession of rare, beautiful qualities. We process all samples on our two-barrel Probat sample roaster, looking for coffees with personality and voice, raw material saturated with the pearlescent essence of the ultra-fine.
All orders are meticulously roasted on our Probat UG-15, the essential furnace and lapidary saw of our operation. This is where we cut the edges of our raw material, applying Apollonian precision and dream-structured order to the Dionysian super-abundance, paring each coffee down to its ideal configuration of surfaces, roasted to maximize the reflection of light, clarity and brilliance.

Unlike wine, roasted coffee is an unfinished product, requiring a final act of transformation, the intended or accidental application of proportionality between coffee, water and time, and, indirectly, grind and water temperature. Whichever brew method you choose, each of our coffees is roasted to balance the fullness of sweetness, acidity, complexity and the saturated depth of sugar body - smooth, transparent as crystal, and clean as Indian summer's freshly minted sunlight.
